Vonnie Hughes has CRISPY ZUCCHINI FRITTERS #recipe #regencyromance

CRISPY ZUCCHINI FRITTERS
3 large zucchinis
⅔ cup flour
2 eggs
1 large spring onion (escallot/shallot) sliced
1 tsp. bicarbonate of soda (baking soda)
1 small can creamed sweet corn
Salt and pepper to taste
Olive or vegetable oil for frying

Grate zucchini into a bowl. Stir in salt. Set aside.

Beat eggs in another bowl.

Squeeze all moisture out of the zucchini and then add it to the eggs. Mix well.

Stir in remaining ingredients and any herbs you prefer.

Heat oil in a large frying pan. Drop in tablespoon dollops of the mixture. Fry until crisp or well browned, turning just once.

Serve warm with sour cream, yogurt and/or chutney.
