Vegan Pea Soup #recipe from @chrispavesic #veganrecipe

Cooking for a family that has food allergies is challenging, primarily because those allergies may change over time (depending upon the degree of sensitivity). One food my family always enjoyed during the winter months was pea soup—until one member could no longer eat ham. So I worked out this recipe that serves four as a meatless pea soup that meets my family’s flavor standards.

Vegan Pea Soup
1 cup dried peas
3 cups water
½ cup baby carrots
½ cup green pepper. diced
½ cup celery—diced
1 tbsp. parsley flakes
½ tbsp. celery flakes
2 tsp. sea salt
¼ cup onions, diced (optional)
4 baked or boiled potatoes, peeled and diced (optional)

Rinse the peas thoroughly before placing them in a saucepan. Add 2 cups of water. Add all the remaining ingredients except the potatoes. Cover the saucepan and simmer for 2 hours, adding the final cup of water at about the 1 hour mark.

The peas should be tender. If they are still somewhat firm at the 2 hour mark, continue to simmer, checking the consistency every 15 minutes. It is fine to add a splash of extra water if needed.

Notes: I adjusted the amount of vegetables and used spices that my family members can eat. If you and yours can eat them and enjoy the taste, add ¼ cup diced onions to the ingredients.

Serving Suggestions: This can be served as the soup course of a meal, or combined with the baked potatoes to create a hearty lunch.

Evenly distribute the diced potatoes into four large soup bowls. Ladle the pea soup over the potatoes and enjoy!

Even back then she could feel the magic starting to gather—starting to pour from her body into the wand as it prepared to transfer to the new host—so she decided to have a little fun with the person who inherited her position.

Easy Potato Soup #recipe by HL Carpenter #NationalGrilledCheeseMonth

January was National Soup Month in the US? What we don’t understand is why April is national grilled cheese sandwich month. Those two celebrations belong together. Someone should right this wrong.

We think we’ll have soup while we work up a petition.

Won’t you join us in a bowl? It’s big enough for all.

Easy Potato Soup
1 tbsp. butter
4-5 potatoes, peeled and diced
Chopped or diced onion to taste
1 tbsp. cornstarch or flour
¼ cup water
2 cups water
1 cup milk (whole, evaporated, or 2%)
1 tsp. salt
1 packet chicken bouillon
Shredded cheese optional

Melt butter in 2 quart saucepan.

Add onions and potatoes and cook until soft (5-10 minutes).

Mix 1 tbsp cornstarch with ¼ cup water (pre-mixing prevents annoying lumps). Add cornstarch mixture, water, milk, salt, and bouillon to softened potatoes and onions in saucepan.

Bring to a boil, reduce heat and simmer 20-25 minutes.

Serve with a topping of shredded cheese and a chunk of fresh bread.

Bonus goodness:
Crave added richness? Substitute ½ cup whipping cream for half of the milk.

Are you a vegetable fan? Toss in the veggie of your choice, either frozen or fresh, when you add the milk and water. We like frozen carrots and corn. They add color and they cook right along with the potatoes.

Like things meatier? Put in leftover ham or chicken.

Bland potatoes? Mix in sweet pickle juice. Six teaspoons give the soup a little zing.

Want some zest? A ½ teaspoon dry mustard provides zip.

Need more soup? Add more stuff. The converse works too.

Fighting off vampires? Switch out the regular salt for a teaspoon of garlic salt. If you have a bad infestation, add ½ teaspoon crushed garlic to the soup and serve with a wood spoon.

Heroes as As American as Apple Pie...and a little French Twist @sloanetaylor2 #recipe

As American as Apple Pie is the hero of my erotic short story French Twist. Don Hobbs knows exactly what he likes in the bedroom as well as the kitchen. This Chicago born and bred man is a true lover of fried chicken. The lady in his life, Claudette D’Laquois, has no clue how to turn on a stove, let alone fry this scrumptious dish. But what can you expect from an Interpol agent? To make Claudette's life easier, I gave her the recipe so she can keep her man happy while he oversees an orchard in Nice, France.

Sloane’s Down-home Fried Chicken
1 tbsp. salt
Tap water
6 chicken legs, or thighs or 4 breasts, skinless and boneless
1 cup flour
1tsp. thyme
½ tsp. marjoram
Freshly ground pepper to taste
1 large egg
1½ tbsp. milk
½ cup solid shortening or lard, plus more as needed

Dissolve salt in a small amount of water. Add chicken pieces then cover with more water. Set this in the refrigerator for 4-6 hours.

Remove chicken from fridge 2 hours before you plan to cook. Drain and pat dry.

Combine flour and seasonings in a paper or plastic bag. Shake gently to combine ingredients. Mix egg and milk in a bowl. Set a clean plate or platter on the counter to hold the breaded chicken.

Place one chicken piece at a time in the bag, shake gently to thoroughly coat, then dip in egg mixture, then return the piece to the bag and gently shake again. Set chicken on the plate. Repeat the process until all pieces are coated. Set the uncovered plate in the fridge for at least 30 minutes.

Heat the shortening in a large frying pan over medium-high heat. Test to be sure shortening is hot enough by adding a small piece of bread. It should sizzle and toast quickly.

Carefully add the chicken pieces. Maintain the temperature, but adjust it so chicken doesn’t burn and grease doesn’t splatter everywhere.

Turning frequently, brown the chicken on all sides. Cover and cook 20-25 minutes or until juices run clear when pierced with a sharp knife.

Lay pieces on a plate lined with paper towels to absorb any oil. Transfer them to a clean platter and serve.

“The only thing I’m worried about is if I have to refer to you as my brother-in-law after this wedding.”

“Please don’t.” He winced as he closed the door.
After checking over her disabled vehicle, he hustled to the driver’s side of his car. While he settled in the seat, Nicole took out her cell phone and held it at arm’s length, selfie-style.

“What are you doing?” He couldn’t take his eyes off her reflection in the rearview mirror.

“Updating my Facebook status. I’ll send you a friend request, and you can check it out. My life is an open book, Officer.”

Cripes. First, she wanted to call him her brother. Now they were going to be Facebook friends. “Whatever you’re comfortable with.” He wouldn’t be comfortable again until she exited the city limits and preferably the state, as well. In fact, he was growing more uncomfortable by the minute, specifically in the crotch of his uniform.

“What are your plans until the rehearsal?” he asked. “Do you want to drive by your dad’s house again? Maybe work up the nerve to ring the doorbell?”

In the mirror, her face flushed. “I have no intention of ringing the doorbell, not because I’m a coward but because he treated his family like crap, and I’m not going to pretend otherwise.”

“Sorry. None of my business.” But he couldn’t help adding, “You know he’s coming to the rehearsal tonight and you’ll see him there?”

“Unfortunately. I can’t avoid running into people I don’t want to see. It’s the reason I never came back to Regret Hollow and still wouldn’t have if my brother hadn’t decided to hold the most important event of his life here.”

He got the message. Her dad wasn’t the only person she’d have preferred to avoid. Arriving at his house, he backed the squad car into the driveway parallel to his truck. As he rounded the car to let her out, he flipped on his phone and accepted her friend request. Thumbing over to her profile, he pulled open the door.

As she stepped onto the driveway, he read aloud the status above her picture. “Hellish meeting, flight delay, defective rental, and now I’m riding in the back of a squad car. Murphy’s Law is biting my ass today.” He lifted his gaze to hers. “If I bite your ass, you’ll find it a hell of a lot more enjoyable than with that Murphy fellow.”

Her eyes widened and then narrowed. “You’re going to have to do a hell of a lot more ass kissing before you get the chance to nibble on anything of mine.”

Deviling the Eggs by HL Carpenter #recipe #middlegrade

Potluck parties are lots of fun; a day to eat hearty and share good times. Bedeviled by what to bring? Try this easy spicy recipe for deviled eggs. (Do you know why they’re called deviled eggs? You get to eat two if you know the answer.*)

Deviled Eggs with Curry
Eggs (week-old or just-ready-to-expire eggs peel more easily)
1 tsp. salad dressing for each egg
Dash of curry powder
Dash of paprika

Hard-boil eggs using an egg cooker or a pot of cold water (cover eggs with water, bring to a boil, remove from heat, cover, and let stand 10-12 minutes). Drain; then place eggs in ice water until cool. Peel cooled eggs and cut in half lengthwise.

Slide egg yolks onto a plate and mash with a fork.

Stir in salad dressing until mixture is smooth and creamy.

Spoon yolk mixture back into egg whites, or use a disposable plastic baggie and an icing tip if you want ooh-la-la fancy deviled eggs.

Sprinkle with curry powder to taste. Dust with paprika for more color.

Arrange on a festive platter and serve warm or cold.

If you’re traveling to the potluck, carry this dish in an insulated cooler with ice.

*According to the Oxford Companion to Food, by Alan Davidson (1999), pp. 247-248, “devil” is a culinary term which first appeared as a noun in the 18th century, and then in the early 19th century as a verb meaning to cook something with fiery hot spices or condiments. The term was presumably adopted because of the connection between the devil and the excessive heat where the devil dwells.

Navy Bean Soup and Pear Salad #recipe from @EMMAJLANE #regencyromance #cozymystery

Regency Romance and Cozy Mystery author Emma Lane is in the kitchen today. She brings us a delicious and easy recipe for a hearty soup to keep you warm. The kitchen is all yours, Emma!

Navy Bean Soup
2 strips bacon
1 med, onion, chopped
3 cups water
1 med. white potato, peeled and cubed
1 can navy or great northern beans, drained
1 clove fresh garlic, chopped fine (optional)

Sauté' onion and bacon until onion is pearly-colored and bacon is crisp. Crumble bacon and add both to pot.

Stir in water, beans, potato, and garlic.

Simmer for at least an hour. Stir occasionally. Do not add more water before serving.

Top the serving with a spoonful of grated cheese or a dollop of sour cream.

Serve with a pear salad and a loaf of French bread or hard rolls.

Pear Salad
l can pears halves or slices, drained
lettuce
dollop of sour cream
sprinkle of nutmeg

Assemble on individual salad plates. Chill until ready to serve.
