Mealtime Woes Are Ended

The world moves faster now and we all have time crunches that take away from home cooking. But here is the perfect meal for when you are really pressed.
Quick Pasta Bake
300gm (10oz) dried pasta Penne works well
1 large onion chopped
3 garlic cloves peeled and crushed
4 rashers of thick bacon cooked and chopped into bite size pieces
1-2 tbsp. of olive oil
125 ml (4 oz) water or wine
400gm (14 oz) tin of plum tomatoes.
1 tsp. dried mixed herbs
110 gm (4oz) of hard cheese grated or mozzarella sliced.
Salt to taste
Pepper to taste
Preheat oven to 180°C or 350°F.
Cook the pasta for the prescribed time on the packet.
In a large pan gently fry the onions and garlic in the olive oil for a few minutes until soft and transparent.
Add tomatoes, water/wine, bacon, and mixed herbs. Season with salt and pepper.
Simmer gently for five to ten minutes until the sauce has thickened slightly.
Combine the drained pasta and tomato mixture and turn in to an oven proof dish.
Sprinkle with cheese and bake ten minutes, or until the cheese is melted and bubbling.
Nice served with a green salad and some crusty bread.

Patience turned to embarrassment that beat a hasty retreat from the anger building in her.
She hadn’t been stood up since she was fifteen. After her damned father ran off that hood wannabe Freddy LaFrano, the Italian guys had lost their balls. Not one of them asked her for a date again. Strong hands clamped onto her upper arms, steadying her as she struggled to catch her breath.

Mercy, woman. Get a grip.
She swallowed hard, counted the pastel shades in her new summer line, then stepped away, calm and collected. Almost.
“Good evening, Cisco.” The sound of her husky voice came as a complete surprise.
“You look very beautiful with flushed cheeks.” He beamed a know-it-all smile as he wrapped his warm fingers around her arm. “Shall we go?”
The night air chilled her heated skin. Cisco clucked his tongue when she shivered. He deftly removed the pashmina shawl from her frozen fingers, then draped it around her shoulders. The fine wool warmed her, but not as well as his hands…

In my new release, Legend of the Timekeepers—the prequel to The Last Timekeepers series—my adolescent characters Lilith, her BFF She-Aba, and an annoying goat-herder named Tau are transported from the ‘Black Land’ through the seventh Arch of Atlantis, and travel back in time to Atlantis one hundred years before the continent’s final destruction. There, Tau finds that he has an insatiable taste for a strange, long yellow fruit he’s never seen before. Fortunately for us, this long yellow fruit—a.k.a. bananas—are readily available at our local markets, and used in some wicked-awesome recipes.
The following recipe is great for families to bond over at campsites or even in their own backyards:
Campfire Peanut Butter-Banana Boat S’Mores
4 bananas, unpeeled
¼ cup smooth peanut butter
4 graham wafers, coarsely chopped
½ cup semi-sweet chocolate chips
½ cup miniature marshmallows
HEAT barbeque to medium-high heat. If doing on campfire, make sure you have a grill over the pit and the fire has died down to coals.
Make deep lengthwise cuts along inside curve of each banana. Be careful not to cut through to opposite side. Place bananas on centers of 4 large heavy duty foil sheets.
Open bananas gently and spread evenly with peanut butter. Top with chopped wafers, chocolate chips, and marshmallows. Fold foil to make 4 packets.
Grill, filled-sides up, 8-10 minutes or until heated through. Cut slits in foil to release steam before opening packets.
TOO RAINY FOR THE BBQ? No problemo. Make it in the oven. Fill bananas and wrap in foil as directed. Bank in 350°F oven 15 to 20 minutes or until heated through.
This is a definite family pleaser where the melty marshmallow classic meets the banana split in this ooey-gooey dessert that cooks in the peel. Too bad Tau couldn’t sample this yummy dish. But allow me to offer you a sample of what to expect in my newest time travel romp Legend of the Timekeepers set to be released this August 30th.

Friday Friends - Kyle of Leigh Daley's Storm Duty Gets the 3rd Degree from His Lineman
(NOTE: Due to unforeseen circumstances, our scheduled interviewer is unable to attend, so questions for Kyle Mathis will be asked by one of his linemen, Matt Pendleton. We hope it goes okay.)
MATT: Today I get to ask my boss, Kyle Mathis, anything I want.
KYLE: That’s not how this works. Can I get somebody else in here please?
MATT: Nope, you got me. So, Kyle, you are the “hero” of Leigh Daley’s book Storm Duty but I’m in it too. How does it feel to be called a hero?
KYLE: We were all just doing our jobs. Nothing about that day felt heroic, you know that. The tornado that destroyed Milton was a monster. We were just trying to keep people safe and get the lights back on as fast as we could.
MATT: Did you enjoy making us all work sixteen hours a day that week during restoration?
KYLE: Nope because I worked eighteen hours myself. But at least we had enough help to get everybody’s power back on in about five days. We’d still be working if those crews from the rest of the country hadn’t shown up to do storm duty with us.
MATT: Speaking of storm duty, I saw that Jenna Harlow had left her big corner office down south to come help out. I heard you two were spending some “quality time” together at your house that week. So what’s up with that?
KYLE: None of your business.
MATT: Come on. You know you want to talk about her. Stacy said she saw her in the grocery store the other day with a cart full of food. So, is she going to be Mrs. Mathis again?
KYLE: As far as I’m concerned, she never quit being Mrs. Mathis. She just needed to come back home and remember that.
MATT: Finally going to paint that house something other than white now that she’s there?
KYLE: (sighs) Every wall in the house has at least three splotches of paint color on it while she decides which one looks best all day. What is it with women? They want a color on the walls. Well, white is a color. I don’t understand.
MATT: Me either. (pauses to reflect) She looks good.
KYLE: Keep your eyes to yourself. I don’t look at Stacy.
MATT: I’m just saying. Jenna is looking really good these days. And for once you look happy. So, how’s the love life? Pretty good huh?
KYLE: Shut up, Matt. This interview is over. Go back to work.
MATT: There you have it, ladies and gentleman. The love life must be rocking hard to make him blush like that.

MATT: Speaking of storm duty, I saw that Jenna Harlow had left her big corner office down south to come help out. I heard you two were spending some “quality time” together at your house that week. So what’s up with that?
KYLE: None of your business.
MATT: Come on. You know you want to talk about her. Stacy said she saw her in the grocery store the other day with a cart full of food. So, is she going to be Mrs. Mathis again?
KYLE: As far as I’m concerned, she never quit being Mrs. Mathis. She just needed to come back home and remember that.
MATT: Finally going to paint that house something other than white now that she’s there?
KYLE: (sighs) Every wall in the house has at least three splotches of paint color on it while she decides which one looks best all day. What is it with women? They want a color on the walls. Well, white is a color. I don’t understand.
MATT: Me either. (pauses to reflect) She looks good.
KYLE: Keep your eyes to yourself. I don’t look at Stacy.
MATT: I’m just saying. Jenna is looking really good these days. And for once you look happy. So, how’s the love life? Pretty good huh?
KYLE: Shut up, Matt. This interview is over. Go back to work.
MATT: There you have it, ladies and gentleman. The love life must be rocking hard to make him blush like that.
KYLE: Shut up. Go back to work.
